The highlands of Peru are an ideal environment for growing coffee. Rich soils, temperate climate and high growing altitudes slow the maturation of the coffee, allowing the beans to accumulate maximum flavour potential.

Organic coffee is grown under strict rules. No synthetic pesticides, herbicides or fertilisers can be used in the production of organic coffee. Often, coffee pulp from the washing process is used as a natural fertiliser, as well as guano and animal fertilisers. This increases biodiversity and reduces soil erosion, as well as preventing harmful environmental effects such as eutrophication.
